Yesterday I attended a cupcake tasting at The Shoppe, located at 3103 East Colfax at St Paul in Denver. What at excellent find! This whimsical bakery is locally co-owned by pastry chef Emma Skala. The cupcakes come in many unusual flavors. The eight mini-cupcakes we tried for the tasting included: Lemon (amazing; filled with lemon curd), Coconut Cream, Carrot, Raspberry Chocolate, Oreo, Salted Caramel, Red Velvet, and Snickerdoodle. What fun! If you have not yet discovered this shop — where you can also get a bowl of cereal for lunch — make a point to do so. Cheers!
