When the cork was pulled on Hermosa Vineyards Merlot 2006, the fragrance of fresh blueberries greeted the tasters. The ruby-red wine was a little hot on the first taste, so we set it aside for a few minutes. Coming back to it, different flavors were ascendant as it opened up in the glass: hints of tree sap, cherries, asphalt, leather, and beefsteak tomato.
This wine paired well with baked pork chops, roasted Brussels sprouts, and dark chocolate. It was a nice complement to the flavors of the food, and would stand up well to a variety of roasted meats.
